Fresh-Frozen Sea Urchin Shells

Sea urchin roe, presented in its own shell — five tongues of deep orange packed into each dark purple, spine-covered husk. The roe is plump and glossy, holding its shape in distinct lobes rather than slumping or weeping, which is what tells you it is fresh.

The flavour is rich, buttery and faintly sweet, with the clean iodine finish that only good uni has. It is already opened and cleaned, so it goes straight from the tray to the plate. Serve it raw over rice or as sashimi with a brush of soy, spoon it onto pasta or scrambled egg at the last moment, or lay it over a seared scallop. Heat dulls it — treat it as a finishing ingredient.
