Fresh Green Sea Kelp Strips

Fresh sea kelp in thick, ribbon-like strips, a deep translucent green that turns brighter where the light hits it. The pieces are glossy and plump rather than dried, some tied into loose knots, all of them even in width and free of grit or torn edges.

The texture is the appeal: a firm, faintly slippery bite with a clean savoury sweetness and none of the saltiness of the dried product. Because it is fresh, it needs very little — blanch it for a minute and dress with soy, vinegar and a thread of chilli, drop it into soup at the end of cooking, or serve it chilled with a dipping saucer on the side, as shown. It also makes a good base for salads and cold plates.
